I’ve been nursing an ear infection/bronchial infection/soar throat now for a coupla days and thought some good chicken soup would help. Hubby and I just had this for dinner, and it was delish. I really prefer to make soup from scratch, and this one turned out so well it had to be blogged. It’s very easy to do:
- a chicken
- some veggies (I used a few cloves of garlic, an onion, three carrots, a potato, some peas and broccoli)
- something starchy, like such as rice or noodles (as you may have guessed from the title, I used barley)
- poultry seasoning
I never measure anything, but generally there was about three cups of veggies, all chopped up fine, two cups of prepared barley, and a tablespoon-ish of the spices.
Boil the heck out of the chicken, usually takes upwards of three hours, remove it from the water, skim the broth to make sure no bones have remained behind, seperate the meat from the fat and bones, and return the meat to the broth. Add veggies and grain (not noodles! put those in last if you’re using noodles), boil again until all the vegetables are soft. Done!
Yum, yummy, yum. This thing hardly needs a recipe, but anyway that’s how I do it.
